Octopus in a terracotta container

An ancient method of cooking octopus makes use of ‘bummulu’, a terracotta container used to prevent heat loss.

Ingredients:
octopuses
peeled tomatoes
white wine
salt
olive oil
chili pepper

Preparation:
Clean the octopuses well, put them inside the bummulu and combine the above ingredients.
After capping the bummulu, shake it to mix the ingredients and place it at the bottom of a wood-burning oven for about 90 minutes.
